The Global G4 Asian 7″ Chef’s Knife (71G4) has both balance and an amazing edge. The blade is made from CROMOVA 18 stainless steel which is ice-tempered and hardened to a Rockwell Hardness of 56-58, allowing it to resist rust, stains and corrosion while maintaining a razor sharp edge. Both sides of the blade are ground down like Western style blades, but instead of a bevel, it’s ground to a point, which will allow that razor sharp edge to stay sharper longer. Global knives have a unique hollow handle filled with the right amount of sand to create the perfect balance.
