The Global G80 7″ Santoku Hollow Ground Edge Knife (71G80) is made from the finest Cromova 18 stainless steel that is ice tempered and hardened to Rockwell C56-58. This allows the blade to remain razor sharp more than any other steel. It also resists rust, stains and corrosion. The knife is carefully weighted to ensure a perfect balance in the hand. The hygienically safe-smooth contours and seamless construction eliminates food and dirt traps.

The Global G80 Santoku is a hand-wash only knife and cannot be put in a dishwasher.
