The Global GSF16 2.5″ Straight Edge Peeling Knife is the  perfect knife for peeling, paring and chopping smaller food items. It is also used to make a cut known as a tourné cut in vegetables such as carrots. It is a specialized type of paring knife. 

The Global GSF is a forged series that is drop-forged for durability in professional kitchens. The GSF Series is a classic collection of small and medium-sized knives with weighted hollow handles. This series is suitable for all areas of food preparation. The GSF products are heavier than the G and GS series.

The blade is constructed of a single piece of steel, with a unique convex edge for unsurpassed performance. The blade is made of the finest stainless steel called CROMOVA 18 (Chromium, Molybdenum and Vanadium), designed exclusively for GLOBAL that is ice tempered and hardened to hold the razor-sharp edge of the blade longer than any other steel.

The ergonomic, stainless steel handles are hollow and filled with sand to achieve perfectly balanced knives and optimal control. The signature dimpled pattern offers a comfortable, slip-resistant grip and the unique shape is perfect for using a pinch grip, it also creates a seamless transition from blade to handle making it very easy to just hand wash and dry, without worrying about stuck food particles.
